Most people are not aware of the traditional sweets famous in each region other than the few ubiquitous Indian sweets. We at Sitara Foods, have many authentic Andhra sweets which are homemade and can remind you of your happy childhood. The Tapeswaram Khaja is one of the famous sweets of Andhra, originating from Tapeswaram, a small town in the East Godavari district. This mouth-watering delicacy is a very popular and aromatic dish, the flavours of which are sure to satiate your taste buds. The crunchy texture, flakiness and the burst of sweetness when you have a bite are pertinent only to the Khaja.
The Tapeswaram Khaja is basically layered fritters made of maida flour and dunked in sugar syrup. The layering gives the sweet its desired flakiness. No festival is complete without this mouth-watering sweet in Andhra. A delectable sweet item, the ingredients which go into making the Madatha Kaja are ghee, sugar, butter, flour and cardamom powder.
Here goes a step-by-step method of making the Khaja.
- Maida or flour is made into soft dough and then into thin chapathis.
- Spread rice flour and ghee mixture.
- Alternately it can be filled with dry fruits like almonds and pistachios.
- Roll it tightly.
- Cut into ribbon shapes.
- Deep fry in ghee until golden brown.
- Soak these fried ribbons in sugar syrup.
